Green Beans and Bacon


  • 2 ½ lbs. green beans, trimmed
  • Salt
  • ½ lb. bacon, roughly chopped
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • Juice from ½ lemon
  • Pepper to taste


Add green beans to a pot of boiling water and cook until bright green and tender (about 5 minutes). Drain the green beans and add to a bowl of ice water to stop them from cooking. Drain again and pat dry. Next, cook the bacon in a pan until crisp, about 5 minutes. Remove from pan. Add onion to the pan and sauté until soft. Sprinkle in the minced garlic and sauté for about 1 minute. Finally, put the green beans in the pan and cook until warm, then add the bacon and squeeze lemon juice over the top. Season with salt and pepper to taste, and serve.
