April’s Mouth-Friendly Recipe 2013

Parmesan-Roasted Broccoli

Ingredients:

  • 4 cups broccoli florets
  • 2 garlic cloves, thinly sliced
  • 3 tbsp olive oil
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 tsp grated lemon zest
  • 1 tbsp lemon juice
  • 2½ tbsp grated Parmesan cheese
  • 1 tbsp fresh basil leaves

Directions:

Preheat oven to 425 degrees F.

Place broccoli in a bowl, then drizzle with 2 tablespoons olive oil and toss with the garlic slivers. Sprinkle with salt and pepper and place in a single layer on a cookie sheet. Roast for 20-25 minutes. Remove broccoli from oven and toss with the remaining 1 tablespoon olive oil, lemon zest, lemon juice, Parmesan cheese, and basil.
